Molasses Banana Pancakes…

Merry Christmas Eve!

Yumm-O, last night I was ohh so happy to be reunited with Molasses (I found it here in Perth last year and then could not again). The Aussies look at you like you have 2 heads when you ask if they stock it!!

Molasses is high in iron and calcium, just use sparingly!

Anyways I had an idea for pancakes for brekky (followed by our green smoothie) and WOW, they turned out great!

Molasses Banana Pancakes (Vegan, but don’t be scared!!)

1 cup nut milk (I used Brazil nut milk, but you could use any milk you like)

1 cup spelt flour (could use buckwheat or whatever you prefer)

1 tsp baking powder

1 tsp molasses*** (every Canadian fridge I know has this!)

1-2 very ripe bananas

Whisk everything together well and add mashed banana. Be sure to cook on a low-ish heat (and keep and eye) as the molasses can make it burn (as I learned quickly!)

This is a great pancake base (the flour, milk & baking powder) that I make often! Add your own ingredients and get creative 🙂 You can even add eggs if you like and substitute water for milk.

*** For Aussies – you could use Golden Syrup or Treacle (but it probably won’t be the same!!)
